Millet is an ancient cereal that is now making a proud comeback in the fields of the Centre Val de Loire thanks to its adaptability: a non-irrigated, heat-resistant crop. Blond millet is also gluten-free and renowned for its high fibre, protein and mineral salt content. It can be enjoyed savoury or sweet.

Preparation:

Rinse the millet qu
ickly. Pour the olive oil into a large frying pan, heat over a moderate heat, then add the millet and a good pinch of salt. Cook for around thirty seconds, stirring, then pour in 2.5 times the volume of boiling water. Cover and cook for 15 minutes over a very low heat. Stir occasionally until all the water has been absorbed. Now it's ready!
